Objective

The industrial visit was organized to provide students of the Diploma in Production and Bakery (HMCT) with practical exposure to professional kitchen operations. The aim was to bridge the gap between academic learning and industry practices by observing real-time operations in a five-star hospitality establishment.

Students were given a comprehensive tour of the Food Production Department at The Taj, Chandigarh, which included:

  • Main Kitchen
  • Bakery and Confectionery section
  • Staff Food Preparation Areas
  • The chefs at the hotel shared the insights with the students pertaining to the following:
  • Organizational structure of the department
  • Standard Operating Procedures (SOPs)
  • Hygiene and sanitation practices
  • Quality control measures followed in luxury hospitality
